Baking: Cheese Scones

  

I made these delicious cheese scones last week and included them in Sundays Weekly Round-Up: #43Several of you loved the look of these and wanted to know the recipe – so here it is. I hope you enjoy!
  

Ingredients

225g Self Raising Flour

55g Butter (I used Stork)

1 tsp Baking Powder 

100g Cheese (I used a lot more than 100g as I love cheese!)

80-90ml Milk (plus extra for glazing)

Pinch of salt

Pinch of cayenne or mustard powder

 

Method

Pre-heat oven 200oc or 190oc for a fan assisted oven. Place the baking tray you are going to use in the oven whilst it pre heats.

Sift together the flour, salt, cayenne or mustard powder and the baking powder in a large mixing bowl.

Cut the butter into cubes and rub into the flour mix until it resembles fine bread crumbs.

Make a well in the middle of the bowl and add the milk a little at a time until the dough just comes together. You may not need all the milk, just gently mix until the dough just forms together – do not over work!

Lightly flour the work surface and rolling pin and gently roll out the cheese scone dough until it’s approximately 2cm thick. Then cut using cookie cutters and place on the pre-heated baking tray.

 

Gently brush the tops of the scones with milk but be careful not to let the milk drip down the sides of the scone as this will inhibit their growth in the oven! Top with a little grated cheese.

   

Bake in the oven for 10-15 minutes or until golden brown.

  

And there you have them – delicious cheese scones. If you want them slightly thicker then roll the dough to 3-4cm. 

This is a fool proof recipe which is roughly based on this one on the BBC Good Food Website. I never follow a recipe completely as I like to experiment and create my own versions…. We definitely put more like 200-300g of cheese in our scones as Dave and I both love cheese.
